Overview
Description

Gum arabic (GA) is a mixture of polysaccharides and glycoproteins (GP) with properties of glue and adhesive. Gum arabic readily dissolves in water, forming a clear solution ranging in color from very pale yellow to orange-brown at a pH of about 4.5. GA is used as an emulsifier and thickener in icings, fillings, chewing gum and other confections. GA was more effective in inhibiting non-enzymatic browning and as a color preservative in dehydrated tomatoes. The addition of GA significantly improved the color stability of anthocyanins; the efficacy decreased with increasing concentrations due to changes in the conformation of the gum molecules that hindered their contact with anthocyanins. Gum arabic was found to be an excellent color preservative and inhibitor of non-enzymatic browning of dehydrated tomatoes during storage.
